I made these cookies for Elayne’s birthday party. Because what better occasion to make birthday cake cookies than a birthday party??







The cookies tasted delicious - with that distinctly sweet cake batter flavor. The kids, and adults too, all loved them. And since they're made using cake batter, they're very quick and easy to make. You don't need many ingredients, and they don't take much time.

To make these cookies, start by creaming together butter and sugar using a stand mixer. Add in the eggs and vanilla, and mix until it is all combined.

Next, add in the cake mix and flour. Mix until all ingredients are incorporated. The dough will be very thick.
Finally, scoop the dough into balls and place them onto a greased baking sheet. Bake the cookies for 10-12 minutes at 350°F. The cookies will not spread much, so they will still be partially ball-shaped. If you would prefer for them to be more cookie-shaped, I would recommend pressing the balls of dough with the palm of your hand to flatten them slightly before baking.

Funfetti Cookies

Yield: 34 cookies

Ingredients

  • ½ c butter, softened
  • ½ c sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 (16.5 oz) box Funfetti cake mix
  • ¾ c all-purpose flour

Directions

  1. Preheat oven to 350°F. Grease baking sheet.
  2. Using a stand mixer, cream together butter and sugar until smooth.
  3. Add the eggs and vanilla. Mix until combined.
  4. Add in the cake mix and flour. Mix until fully incorporated. The dough will be very thick.
  5. Scoop the dough into balls and place on the prepared baking sheet. Bake 10-12 minutes.
  6. Allow the cookies to cool before removing from baking sheet.

Notes

  1. The cookies do not spread much during baking. They will look very under-done.
