Watermelon Prosciutto Skewers

These Watermelon Prosciutto Skewers are very easy - no baking required.

These skewers offered a good variety to the other foods I made for our housewarming party. They are different than the typical appetizers I make. I don’t usually do too many cold appetizers, except for dips. But these were a good, light appetizer. And the watermelon was sweet, juicy, and perfect for summer.

Start by scooping the watermelon into balls using a melon baller. The melon ball I have has 2 different sizes. I used the smaller of the two, and it seemed to be a good size for the skewers. You will need 2 watermelon balls per skewer. Then cut your prosciutto pieces in half. Half of a slice will go on each skewer.

Next, assemble the skewers. On each skewer, add the ingredients in the following order:

  • Watermelon ball
  • Mozzarella pearl
  • Prosciutto
  • Basil leaf
  • Watermelon ball

Finally, immediately before serving, drizzle the balsamic glaze over the skewers.


Watermelon Prosciutto Skewers

Yield: 36 skewers

Ingredients

  • Appetizer skewers
  • Small watermelon
  • 12 oz mozzarella pearls
  • 18 pieces prosciutto
  • 36 basil leaves
  • Balsamic glaze

Directions

  1. Using a melon baller, scoop out balls of watermelon. You will want 2 balls per skewer.
  2. Cut the prosciutto pieces in half.
  3. Assemble the skewers. On each skewer, place 1 watermelon ball, 1 mozzarella pearl, 1 piece of prosciutto, 1 basil leaf, & 1 more watermelon ball.
  4. Repeat the assembly until you have 36 skewers.
  5. Immediately before serving, drizzle the balsamic glaze over the skewers.
