Lucky Charms Mint Cookies

These Lucky Charms Mint Cookies are very minty and extremely sweet. The kids will love them. They are one of those cookies where you won't be able to eat too many.
Start by preheating the oven to 350°F. Grease a baking sheet with cooking spray.
I had Elayne helping me measure all the ingredients. She especially liked picking out all the Lucky Charms marshmallows. She would eat a marshmallow, put one in the measuring cup, then eat one, and put one in the measuring cup 😂
Cream together the softened butter and sugar til it's smooth. Add in the egg, peppermint extract, and green food coloring. Mix until the ingredients are fully combined and the dough is completely green.

In a separate medium bowl, mix together the flour, baking soda, baking powder, cream of tartar, and salt.
Gradually add the flour mixture to the butter mixture, mixing well between each addition.
Fold in the Andes mints and Lucky Charms marshmallows.

Roll the dough into balls and place them on the prepared baking sheet.
Bake 8-10 minutes, until the edges are just set.
Allow cookies to cool slightly before removing from pan to cool completely.

Yield: 32 cookies

Ingredients

  • ½ c butter, softened
  • ¾ c sugar
  • 1 egg
  • ½ Tbsp peppermint extract
  • 3-4 drops green food coloring
  • 1½ c all-purpose flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cream of tartar
  • ¼ tsp salt
  • 1 c Andes mints, roughly chopped
  • 1½ c Lucky Charms marshmallows

Directions

  1. Preheat oven to 350°F. Grease baking sheet w/ cooking spray.
  2. Cream together butter & sugar.
  3. Add egg, peppermint extract, & food coloring; mix til combined.
  4. In a separate medium bowl, combine flour, baking soda, baking powder, cream of tartar, & salt.
  5. Gradually add flour mixture to butter mixture, mixing well between each addition.
  6. Fold in Andes mints & Lucky Charms marshmallows.
  7. Roll dough into balls & place on prepared baking sheet.
  8. Bake 8-10 minutes, til edges are set.
  9. Allow cookies to cool slightly before removing from pan.
