Lemon Sugar Cookie Bars

What I love about these bars is that the sweetness prevents the lemon from being over-powering. You don't have to absolutely love lemon in order to enjoy this dessert.

These bars are so very easy to make, and do not require all that many ingredients.
Start by preheating the oven to 350°F.
Line a 9x13-inch pan with aluminum foil. Then grease the foil-covered pan with cooking spray.

Using a stand mixer, cream together the softened butter, sugar, and vanilla til ingredients are fully combined. Gradually add the flour, mixing well between each addition, until all ingredients are fully incorporated.

Press half of the dough into the bottom of the prepared pan. Bake for 15 minutes, until the crust turns golden in color. Remove from the oven and allow crust to cool completely before adding the filling.

While the crust is cooling, make the filling. Using either a stand mixer or hand mixer, beat together the room temperature cream cheese, sugar, lemon juice, and 1 Tablespoon of lemon zest until the mixture is smooth. Spread the filling over the cooled crust.

Crumble the remaining dough on top of the filling. Bake for 25 minutes, until the cookie bars are golden brown. Remove from the oven, and top with the remaining 1 Tablespoon of lemon zest.

Once the bars have cooled, slice them and serve. Everyone will love them!

Ingredients

Cookie Crust:

  • 1 c butter, softened
  • 1 c sugar
  • 1 tsp vanilla
  • 2 c all-purpose flour

Filling:

  • 8 oz cream cheese, room temperature
  • ½ c sugar
  • ¼ c lemon juice
  • 2 Tbsp lemon zest, divided

Directions

  1. Preheat oven to 350°F. Line a 9x13-inch pan w/ aluminum foil; grease w/ cooking spray.
  2. Cream together butter, sugar, & vanilla til fully combined.
  3. Gradually add flour, mixing well between each addition.
  4. Press half the dough into the bottom of the prepared pan. Store remaining dough in fridge til ready to use.
  5. Bake 15 minutes, til light golden in color.
  6. Allow crust to cool completely before adding filling.
  7. While crust is cooling, make the filling. Beat together cream cheese, sugar, lemon juice, & 1 Tbsp lemon zest til smooth.
  8. Pour filling over cooled crust.
  9. Crumble remaining dough over filling.
  10. Bake 25 minutes, til cookie bars are golden brown.
  11. Top w/ remaining 1 Tbsp lemon zest.
