Peanut Butter Snickers Cookies

I made these cookies the other day when we went to my parents' house for Father's Day. Everyone enjoyed them. They were very good, and also very easy to make. Elayne even helped me with them. She loves to pour the measured ingredients into the mixing bowl.
Start by preheating the oven to 350°F. Grease a baking sheet with cooking spray.
Using a stand mixer, cream together the softened butter, peanut butter, sugar, and brown sugar. Add in the egg, vanilla, milk, salt, and baking soda. Mix again until all ingredients are combined.
Gradually add the flour, mixing well between each addition. Make sure to scrape down the sides of the bowl if needed so that all the flour gets fully incorporated.
Next, unwrap the Snickers Minis, and cut them in half. You could use a whole Snickers, but then you'll need to make very big cookies, which I don't typically like to do. I tend to stick with small to medium sized cookies.
Scoop about a tablespoonful of cookie dough. Flatten it between your palms. Place a halved Snickers into the center of the dough. Wrap the dough around the candy, making sure to fully enclose it. If the Snickers is not fully wrapped in the dough, the caramel can leak out as it bakes. And this can cause a big mess, and it will also make the cookies stick to the baking sheet. Roll the dough into a ball, and place it on the greased baking sheet.

Bake for 10-12 minutes, til the cookies just begin to turn golden-brown. Once done baking, allow the cookies to cool slightly before removing them from the pan to cool completely.


Peanut Butter Snickers Cookies

Yield: 32-34 cookies

Ingredients

  • ½ c unsalted butter, softened
  • ¾ c peanut butter
  • ¼ c sugar
  • ¾ c brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 Tbsp milk
  • ¼ tsp salt
  • ½ tsp baking soda
  • 1½ c all-purpose flour
  • 16-17 Snickers Minis, cut in half

Directions

  1. Preheat oven to 350°F. Spray a baking sheet w/ cooking spray.
  2. Using a stand mixer, cream together butter, peanut butter, sugar, & brown sugar.
  3. Add egg, vanilla, milk, salt, & baking soda; mix til combined.
  4. Gradually add flour, mixing between each addition.
  5. Scoop cookie dough, about 1 tablespoon in size. Flatten cookie dough between palms, place a halved Snickers Mini into the dough, & fully wrap the dough around the candy.
  6. Place cookies on prepared baking sheet. Bake 10-12 minutes, til cookies just begin to turn golden-brown.
  7. Allow cookies to cool slightly on pan, before removing to cool completely.

Notes

  1. Make sure to wrap the cookie dough completely around the Snickers. If the caramel leaks out, it can stick to the pan a lot.
