Pineapple Crumble Bars

I made these Pineapple Crumble Bars for Father's Day, and they were a big hit. They were a perfect dessert to go with our relaxing pool day.

They can be a little messy to eat, because they are pretty crumbly. But I’ve never had a problem with a little mess 😊

They are also very easy to make. You don't need too many ingredients, and many of them would already be in your pantry. Start by preheating the oven to 325°F. Grease a 9x13-inch baking dish with cooking spray.
Next, prepare the crust. Combine the flour, sugar, and salt together in a medium bowl. Using two knives, cut in the softened butter. To cut in the butter, add the butter into the dry ingredients. Then hold two knives, point down, crossing each other in an X shape. Proceed to cut the butter into smaller and smaller pieces with your knives. The butter will slowly start to mix with the dry ingredients. Although, you will still have some crumbles of butter. You just don't want to have any big clumps of butter.

Add the vanilla into the crust mixture. Continue cutting in to mix the vanilla. The crust will be very crumbly and powdery. Press ⅔ of the crust mixture into the prepared 9x13 pan. Set the remaining crust aside.

Next, make the filling. Combine the crushed pineapple, sugar, egg yolk, cornstarch, and lemon juice into a medium pan. Cook over medium heat, stirring almost continuously, til the mixture is thickened.
Spread the filling over the crust in the baking dish, making sure to cover the entire crust. Then cover the filling with the reserved crust mixture, trying to cover as much of the filling as possible.

Bake the pineapple bars for 50-55 minutes, til they are slightly golden-brown.
Allow the bars to cool completely before cutting and serving.

Yield: 24 bars

Ingredients

Crust:

  • ¾ c sugar
  • 3 c all-purpose flour
  • ½ tsp salt
  • 1 c butter, softened
  • 1 tsp vanilla

Filling:

  • 40 oz crushed pineapple, including juice
  • 1 c sugar
  • 1 egg yolk
  • 4 Tbsp cornstarch
  • 1 tsp lemon juice

Directions

  1. Preheat oven to 325°F. Grease a 9x13-inch baking sheet w/ cooking spray.
  2. Prepare the crust: Mix flour, sugar, & salt together in medium bowl.
  3. Cut in the butter.
  4. Add in vanilla. Continue cutting to mix.
  5. Press ⅔ of the mixture into the prepared pan. Set remaining aside.
  6. Make the filling: Combine all filling ingredients in a medium pan. Cook, stirring almost continuously, til thickened.
  7. Spread the filling on top of the crust.
  8. Cover filling w/ remaining crust mixture.
  9. Bake 50-55 minutes, til slightly golden-brown.
  10. Cool completely before cutting into squares.
