Honey Cookies

These Honey Cookies are a perfectly sweet treat for any occasion. They are very similar to sugar cookies, but with a hint of added sweetness.

I made these cookies for Elayne's 3rd birthday party. It was a Winnie the Pooh themed party, so the cookies fit into the theme perfectly. These cookies sound like they would be sickeningly sweet, but in actuality, they aren't. The honey just gives a very slight hint of sweetness on top of the sugar cookie flavor.
They are very simple to make, and they don't require any ingredients that you probably don't already have in your pantry.
The dough will need to chill for a bit after it is made. So there is no need to preheat the oven yet. Start by combining the softened butter, 1 cup of sugar, brown sugar, honey, and vanilla in the bowl of a stand mixer. Beat them together until the mixture is creamy and fully combined. Add in the egg. Mix until the egg is fully incorporated.
In a separate medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt. With the mixer on low speed, gradually add the flour mixture into the butter mixture, making sure to mix well between each addition. This will prevent the flour from flying out of the bowl and going everywhere. Scrape down the sides of the bowl as needed while mixing. This will allow your dough to get fully combined.

Cover the dough with some saran wrap, and place it in the refrigerator to chill for at least 30 minutes.
When the dough is chilled, remove from the fridge.
Preheat the oven to 375°F. Grease a baking sheet with cooking spray.

Scoop out the dough into 1-inch balls. Roll the dough in the remaining ½ cup of sugar, and place it on the prepared baking sheet.
Bake the cookies for 8-10 minutes, until they are a light golden brown color. I allowed the cookies to cool on the baking sheet for just a minute or two before removing, so that they would not overbake.

Honey Cookies

Yield: 32-36 cookies

Ingredients

  • 1 c unsalted butter, softened
  • 1½ c sugar, divided
  • ¼ c brown sugar
  • ⅓ c honey
  • 1 tsp vanilla
  • 1 egg
  • 3 c all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt

Directions

  1. In large bowl of a stand mixer, beat together butter, 1 c sugar, brown sugar, honey, & vanilla til creamy.
  2. Add egg; mix well to combine.
  3. In separate medium bowl, combine flour, cornstarch, baking powder, baking soda, & salt.
  4. Gradually add flour mixture to butter mixture, mixing well between each addition.
  5. Cover dough w/ saran wrap. Refrigerate 30 minutes.
  6. Once dough is finished chilling, remove from fridge. Preheat oven to 375°F. Grease a baking sheet w/ cooking spray.
  7. Scoop dough into 1-inch balls. Roll in remaining ½ c sugar, & place on prepared baking sheet.
  8. Bake 8-10 minutes, til slightly golden.
