Loaded Tater Tot Cups

This past weekend, the kids were staying at my parents' house. We had an entire weekend without kids! It was so strange, yet so peaceful. So we planned a bunch of things we wanted to do together. We went out to a nice dinner, went to a movie, ran a few errands together, and played some board games. One of those days, we had another couple over to play board games. So, of course, I had to make some snacks!

One snack I made was Loaded Tater Tot Cups. Everyone loved them - they were all gone by the end of our game! I love how quick and easy they are to make. And they have all the delicious-ness of loaded tater tots, but in bite-sized cup form.
So how to make them: Start by preheating your oven to 450°F. Grease a mini muffin pan with cooking spray. Then place 2 (still frozen) tater tots into each muffin cup. If you'd rather use a regular muffin pan instead of mini, then you'll need 4 tater tots per cup. Bake the tater tots for 10 minutes.
After the 10 minutes of baking, remove the pan from the oven. Press the tater tots into cup shapes. I did this using a tart tamper. But you could also grease the bottom of a shot glass and use that to shape the tater tots. Return the pan to the oven. Bake an additional 15 minutes, til dark golden brown.
Remove pan from oven, and top each tater tot cup with about a teaspoon or so of shredded cheese. Return to the oven, and bake 3-5 more minutes, til the cheese is fully melted.
Remove the pan from the oven, and transfer the tater tot cups to a serving platter. Top each cup with a small dollop of sour cream, a pinch of bacon bits, and a couple of scallions. Serve the tater tot cups warm. Everyone will love them!

Loaded Tater Tot Cups

Yield: about 48 cups

Ingredients

  • 32 oz frozen tater tots
  • 1½ c shredded cheddar cheese
  • 1 c sour cream
  • ½ c bacon bits
  • 2 scallions, finely sliced (green part only)

Directions

  1. Preheat oven to 450°F. Grease a mini muffin pan w/ cooking spray.
  2. Place 2 frozen tater tots in each muffin cup.
  3. Bake 10 minutes. Press the tater tots into a cup shape. I did this using a tart tamper, but you could also grease the bottom of a shot glass.
  4. Return to oven; bake 15 minutes, til dark golden brown. Remove from oven.
  5. Add 1 tsp of cheese to each tater tot cup. Return to oven; bake 3-5 minutes, til cheese is fully melted.
  6. Remove from oven. Transfer to serving platter. Top w/ a small dollop of sour cream, a pinch of bacon bits, & a couple scallions. Serve warm.

Notes

  1. I like using a mini muffin pan so that each tater top cup is bite-sized. But you could also use a regular muffin pan for larger cups. If so, place 4 tater tops in each muffin cup.
