Neapolitan Cookies

These Neapolitan Cookies are a colorful, delicious addition to any summer day. Just like the iconic Neapolitan ice cream. Full of strawberry, vanilla, and chocolate. It's the perfect summertime treat.

Elayne and I made these cookies to take over to my friend’s house over the weekend.
Elayne, Nicole, and I went over there to have a sleepover with her and her two boys.


Everyone loved them, the kids especially. And we had a blast at our sleepover. Lots of swimming, golf cart rides, and playing. And of course, wine time for the adults after the kids went to bed. Sleepovers as an adult are definitely much different than they were when I was a kid. 😊

Start by preheating the oven to 350°F. Grease a baking sheet with cooking spray. In a medium mixing bowl, combine the flour, baking soda, and salt. Set the flour mixture aside until ready to use.
Using a food processor, crush the freeze-dried strawberries into a fine powder. Set the strawberry powder aside until ready to use.
Using a stand mixer, beat the softened butter til creamy. Add the sugar. Beat again til light and fluffy. Add the egg, egg yolk, and vanilla. Beat again until fully combined. Gradually add the flour mixture into the butter mixture, mixing well between each addition.
Divide the dough into 3 equal portions.
Place one third of the dough back into the mixer. Add the powdered strawberries and food coloring; mix til combined. Remove dough from mixer.
Place another third of dough into the mixer. Add the cocoa powder and mix til combined.
Pinch off a small piece of colored dough, press them together, and roll into a ball. Roll dough in sugar, and place on the prepared baking sheet.

Bake 7-9 minutes, til edges start to set. Remove from oven. Allow cookies to cool for a minute on the pan, then remove from pan to cool completely.

  • ¾ tsp baking soda
  • ¾ tsp salt
  • ½ c freeze-dried strawberries

  • 2 tsp vanilla
  • 2-3 drops red food coloring
  • 2 Tbsp cocoa powder

  6. Add egg, egg yolk, & vanilla; beat til combined.
