I know I haven’t posted much lately. Life has gotten in the way.
The holidays were super busy. I know they’re always busy, but this past year just seemed extra stressful to me. Nicole is at just the right age to be a handful - getting into everything, throwing things everywhere.
And add to that all the effort that goes in to making the holidays magical for the kids. In addition to doing all the Christmas shopping, for both the girls and both our families, I also did all the wrapping, holiday cards, baking for friends and neighbors, and planning all the extra holiday activities. Decorating the Christmas tree, decorating the house, visiting Santa, making gingerbread houses, watching Christmas movies, going to see holiday lights, etc.
Don’t get me wrong, I love doing all that stuff. And I want the kids to have all those memories and to feel the magic of the season. But it really does take a lot of time and effort to plan it all and make it happen.

Anyways, that’s all for my venting session.
On to the monkey bread. We had a couple friends over this past weekend to play some board games. So I made some food for the occasion. In addition to this monkey bread, I also made Sweet Potato Sausage Skewers, Cobb Dip, and S'mores Pie.
Everyone really liked all the food, but the monkey bread was the only new one, and it was a big hit.

One thing I love about this recipe is that you can modify the flavors and toppings however you'd like to make it your own. And, it's super easy to make.

Start by preheating the oven to 350°F. Generously grease a bundt pan with butter.
If you don’t want to use butter, you could use cooking spray, but the butter will help to give your bread a nice, golden color.

Place the cheeses and herbs (or whatever toppings you’d like) into small bowls.
Melt the butter in a small bowl. Stir the minced garlic into the butter.

Cut each biscuit in half, and roll each piece into a ball.
Dip each biscuit ball into the butter/garlic mixture, then into one of the toppings. Place the biscuits into the prepared bundt pan. Alternate toppings with each biscuit.

Bake for 30-35 minutes, til the biscuits are golden and baked through. If the biscuits begin to brown too much before they're finished baking, place some aluminum foil on top to prevent further browning.

Savory Monkey Bread

Yield: 12 servings

Ingredients

  • 2 (16 oz each) cans of 8-count biscuits
  • 1 stick butter, melted
  • 3 garlic cloves, minced
  • ½ c shredded cheddar cheese
  • ½ c shredded parmesan cheese
  • ½ c fresh parsley, chopped
  • ½ c poppy seeds

Directions

  1. Preheat oven to 350°F. Generously grease a bundt pan w/ butter.
  2. Place the cheeses & herbs in small bowls.
  3. Stir the minced garlic into the melted butter. Cut each biscuit in half & roll into a ball.
  4. Dip each biscuit ball in butter/garlic, then dip into one of the toppings & place in the prepared bundt pan. Alternate toppings w/ each biscuit.
  5. Bake 30-35 minutes, til golden.

Notes

  1. You can mix up the toppings however you'd like. Try some other herbs or cheeses.
