Leprechaun Shortbread Bites

These Leprechaun Shortbread Bites are a fun, easy treat for St. Patrick's Day. They are so simple to make, and they are festively green.

Start by preheating the oven to 325°F. Line an 8x8-inch pan with parchment paper.
Now it's time to make the dough. Using a stand mixer, cream together the butter, sugar, and vanilla til it's smooth and creamy. Add the flour and salt; mix on a low speed til the mixture is crumbly. Add the food coloring and continue to mix til a dough forms. Stir in the rainbow sprinkles.
Transfer the dough to the lined 8x8 pan. Press dough evenly into the bottom.
Use the parchment paper to lift the dough and transfer it to a cutting board. Cut the dough into ½-inch squares.
Place the shortbread squares on an ungreased baking sheet. Bake for 12-13 minutes, til the bottoms just begin to brown.

Ingredients

  • 1 stick butter, softened
  • ¼ c sugar
  • ¼ tsp vanilla
  • 1¼ c all-purpose flour
  • ¼ tsp salt
  • 4-6 drops green food coloring
  • 4 tsp rainbow sprinkles

Directions

  1. Preheat oven to 325°F. Line an 8x8-inch pan w/ parchment paper.
  2. Cream together butter, sugar, & vanilla til creamy.
  3. Add flour & salt; mix on low speed til crumbly.
  4. Add food coloring; continue mixing til dough forms.
  5. Stir in sprinkles.
  6. Transfer dough to the lined pan, & press evenly into the bottom.
  7. Use the parchment paper to lift the dough and transfer to cutting board. Cut dough into ½-inch squares.
  8. Place shortbread squares on ungreased baking sheet. Bake 12-13 minutes, til bottoms just begin to brown.
