Patriotic Poke Cake

This Patriotic Poke Cake is a fun and flavorful dessert for your 4th of July celebration.

This cake is light and fruity, without being overly sweet. And it's very easy to make.
Start by making the cake according to the package directions. I like to make the egg white recipe. Bake the cake in a 9x13-inch pan. After baking, allow the cake to cool for 15-20 minutes. Then, use the handle of a wooden spoon to poke holes all over the cake, about 1 inch apart.
Next, make the jello. In 1 cup of boiling water, dissolve the red jello, making sure to mix well until fully dissolved. In another cup of boiling water, dissolve the blue jello. Pour both jellos over the cake, alternating which seciton has red and which has blue.
Chill the cake in the fridge for at least 2 hours. This will give the jello time to set. Once the cake is chilled, spread the thawed cool whip evenly over the entire cake. Top the cake with fresh strawberries, blueberries, and the patriotic sprinkles. Serve the cake chilled.

Ingredients

  • 1 box white cake mix
  • Ingredients to make box cake mix (egg whites, oil, water)
  • 1 box red jello
  • 1 box blue jello
  • 2 cups boiling water, divided
  • 1 container cool whip, thawed
  • Fresh strawberries
  • Fresh blueberries
  • Red, white, & blue sprinkles

Directions

  1. Prepare cake according to package directions; bake in a 9x13-inch pan.
  2. Allow cake to cool for 15-20 minutes after baking.
  3. Using the handle of a wooden spoon, poke holes in the cake, about 1 inch apart.
  4. In 1 cup of boiling water, dissolve the red jello.
  5. In another cup of boiling water, dissolve the blue jello.
  6. Pour the jellos over the cake, making sure to fill in the holes.
  7. Chill the cake in the fridge for at least 2 hours.
  8. Spread the cool whip over the chilled cake. Top w/ strawberries, blueberries, & sprinkles.
  9. Serve chilled.

Notes

  1. For better flavor, make the cake the night before.
